It is one thing to see your friend lose 20 kg, and it is yet another to see her open a new Bento Bar – Lean Bento – concept to help others achieve what she has 🙂 First off, I love Lean Bento’s clean and simple Japanese-inspired design which stands out among the shops in the arcade. It is a great use of space to be able to accommodate the CBD lunch crowd! While still maintaining the 500 calories per meal philosophy, using responsibly sourced, pesticide-free and clean ingredients, owners Charles Ng and Dionis Chiua have, after many months of research and experimentation, developed a variety of new tastes, textures and flavors. Ever since I turned 100% vegan and as raw as I be, one consistent challenge at 9pm that N and I face is – “We are so hungry and we have run out of juice/blends. What do we eat?” This puts us face to face with temptation.. Recipe: Nepalese Dwarika’s Summer Salad

During my amazing stay at Dwarika’s at Nepal before we did our Poon Hill trek, N and I tried some amazing food at the Dwarika’s Resort. At that time I wasn’t vegan, but the food quality was exquisite. Since then, I have come to learn that at Dwarika’s Resort Dhulikhel, Mr. Pramod Mahaseth, the head chef, obtains almost all of the restaurant’s ingredients from their very own two organic farms – one near Dhulikhel and the other in Chitwan. I am glad that while the Dwarika’s Group preaches that food is a very important aspect of the lifestyle at the resort, they live what they preach by sourcing and growing their own organic, fresh Nepali ingredients. Here is one amazing looking salad recipe from Dwarika’s Resort Dhulikhel, which I believe we can all reproduce at home even if we can’t travel to beautiful Nepal!
