I was shocked the first time I heard how and WHY cancer happened. I was also surprised that the medical doctors I have met throughout this journey never explained to me WHY cancer happens at the first place, because we need to know the WHY to get to the prevention/improvement. This 8 minute video by Shafin de Zane explains well the cancer happens at the first place because our cells are trying to protect itself by mutating, otherwise it would die because it is swimming in a sea of toxins. I have been looking out for cafes that serve both good vegetarian and non-vegetarian dishes so we can have a good meal with our friends who do not want to eat vegetarian dishes. So I am glad to find espressolab at China Square with good selection of vegetarian dishes. In fact, Ms Alicia Teoh, owner of espressolab at China Square, was a vegetarian for a few years before! Espressolab is conveniently located in the CBD with many seats, so this is an excellent choice for lunch. The cafe is also brightly lit so it is a good place to camp at if you need to do work or have work meetings. Alicia is extremely particular about the quality of her decor and even imported all the rubberwood tables from Penang to ensure quality of the furniture is not compromised for the customers. Generally, I find that when owners are very detailed about comforts for the customers, the food and service tends to be good and espressolab did not disappoint indeed! I heard of Zen Fut Sai Kai from my grandmother for decades. Now that we have turned vegan and have lesser food options, we decided to give it a shot. The food doesn’t disappoint indeed, tastes like healthier version of local tze char. Was introduced this signature dish – Fried Beancurd Balls with Kailan. They have many dishes that are full of vegetables so I personally opt for those rather than mock meats. The flavours are also very local and tasty.  No wonder they have been around for decades! Mum’s Stage 4 Colon Cancer Recovery Journey – Part 6

Now that mum’s Stage 4 Colon Cancer is in remission with her PET-CT scan showing resolved metabolic activity and her CEA markers consistently in normal range, there are days even I tend to forget the details of this blessed journey we have been on this year. It has really been a very epic year from being told my mum had stage 4 cancer in February when all she had was irritable bowel syndrome (IBS) symptoms, to being told in March she only had 6 months to live if she didn’t do chemotherapy, to her being in remission by Jun and now even healthier than before, without having to take her high blood pressure medication she was taking for 20 years before this. ALL in the same year! We are in the midst of creating healthy snacks for ourselves, so after experimenting with raw vegan chips a few times, this is the recipe that creates the most cheesy, yummy kale chips that even non-veggie lover friends and family are raving about (and ask us to make more of!) After sharing with many people my concern on over-chlorination in our drinking water, quite a few people have asked me which water distiller I use. I use the Purwa Water Distiller. Firstly, what is distillation? Distillation is nature’s way of cleaning water. Water evaporates from the earth’s surface after rain, leaving impurities behind, and re-condenses into clouds to produce rain. Distillation process replicates this same mechanism. “Distillation is a water purification process that uses a heat source to vaporize water and separate it from contaminants and other undesirable elements commonly found in ground and surface water. Distillation heats raw (untreated) water until the water reaches its boiling point and begins to vaporize. The heat is then kept at a constant temperature to maintain water vaporization while prohibiting other undesirable elements from vaporizing. Water has a lower boiling point than salt and other mineral sediments. This process also separates the water molecules from microscopic, disease-causing organisms. Once all of the water has vaporized, the vapor is led into a condenser, where, upon cooling, the water reverts …
